Vegan Baked Red Potato Slices

These are great as a side dish or snack; baked potato slices complement salads and sandwiches beautifully. Try the two different versions below for variety. Both are delicious!  

  • 4 large red potatoes 
  • Spicy mustard
  • 1/3 cup Dijon mustard
  • 1-2 tablespoons Deb’s Seasoning (page 269)
  •  ½ teaspoon sea salt

Preheat oven to 400°F (205°C).  Slice potatoes into ½” slices but leave the skin on. Toss mustard and seasoning together in a bowl, and add potato slices to coat.  Add a light coat of cooking spray to baking pan and add potatoes. Bake for 35-40 minutes or until tender and lightly brown. Sprinkle on top sea salt after baking.
