Vegan Pita Toasts

  • 3 pita breads
  • 2 tablespoons vegan butter, room temperature    
  • 1 tablespoon fresh parsley, minced 
  • 1 teaspoon fresh chives 
  • 2 teaspoons fresh lemon juice 1 clove garlic, minced   
  • Salt and pepper, to taste

Preheat oven to 425°F (220°C).  Cut pita into quarters. Blend the butter with other ingredients and let stand room temperature for 15 minutes. Spread on inside of bread.  Place pita quarters in a single layer on a baking sheet pan. Bake for about 5 minutes or until crisp. Remove from oven and serve warm.
