Everyone loves this recipe. The best part is that no oil is added or needed.
Rinse beans well and be sure and look for rocks. Place in large pot, cover with fresh water and soak for 30 minutes to overnight. Soak for at least an hour. Remember that the beans will get 2-3 times larger once they are soaked. Pour off water, add fresh water and then over medium heat, bring to a full boil for 30 minutes. Keep adding water if the level goes below the beans to make sure they do not dry out and burn. Once the beans have reached their full size, add chopped onion, seasonings, one teaspoon of salt and freshly ground pepper. Reduce heat to low, partially cover and simmer for about 1-1½ hours, until beans are tender, creamy and soft inside but not falling apart. When beans are done, taste and add Tabasco® sauce if more heat is needed.
