Vegan Basic Fruit Cobbler with Oatmeal Topping

You can use almost any fruit you want: peaches, blueberries, strawberries, blackberries, plums or nectarines fresh or frozen. Adjust the flavor of the preserves to go with the fruit or combine different flavors for a little zip to this dessert.  

  • 4 cups sliced fruit or berries
  • ½ cup matching preserves
  • A sprinkle cinnamon or nutmeg can be nice, depending on fruit
  • 3 teaspoons lemon juice
  • 4 tablespoons all-purpose flour
  • ¼ cup brown sugar
  • ¾ cup quick cooking oatmeal
  • ¼ cup brown sugar or 2 tablespoons maple syrup or both
  • 2 tablespoons vegan butter, room temperature (optional)
  • ¼ cup sliced almonds, chopped walnuts or pecans

Preheat oven to 350°F (175°C). Lightly oil a 9”×9” baking pan or dish.  Place fresh fruit or berries in a medium bowl. Combine preserves, cinnamon, and lemon juice. Pour mixture over fruit and gently toss trying not to mash fruit. Sprinkle flour and ¼ cup brown sugar over mixture and toss. Spread fruit mixture evenly in the bottom of a baking dish.  In a large mixing bowl, combine oats, sugar or maple syrup and vegan butter. Crumble the oat mixture and nuts over top of the fruit. Place pan in oven and bake until light golden brown in color (about 20-25 minutes). Remove and serve warm or room temperature.
