Vegan Green Rice

A colorful and healthy change to regular rice. 

  • 2 cups water
  •  1 cup long grain brown rice
  •  ½ teaspoon salt (use less if vegetable broth contains salt)
  •  1 clove garlic, minced 
  •  ½ cup arugula or spinach, baby, chopped
  • Dash of freshly ground pepper

 In a saucepan, bring water to a boil and add rice. Then add salt and minced garlic. Cover and lower heat to simmer for 45 minutes. Turn off heat and let sit for 5 minutes. Mix in spinach or arugula and pepper and serve.  If using white rice reduce amount of liquid to 1½ cups and cook for 25 minutes.
