Vegan Guacamole

Most people overwork guacamole—keep it simple, fresh and wonderful. Plan on half of an avocado per person with one whole one for the bowl. It really depends on how hungry your crowd is. Adjust ingredients according to the number you are serving.  

  • 6 avocados
  • ¼-½ cup red onion, finely diced
  • 1 large or 2 medium tomatoes, finely diced
  • 1-2 fresh jalapeño, seeded, finely diced
  • 2 fresh limes, one for salad and one for top
  • Salt, to taste

Peel and remove seeds from avocados and place in a non-metal bowl. Add onions, tomatoes, jalapeños, juice of one lime and salt. Do not mash; mix in a cutting motion with a knife!

You want to end up with chunks of avocado in mixture not mushy and smooth. Taste and adjust quantity of jalapeño, salt, and lime juice to match your tastes. If you are satisfied, squeeze more lime juice on top, cover with plastic wrap, and refrigerate until ready to serve.
