Vegan Mushroom Gravy

Delicious! You can use this savory gravy on so many things!

  • 1 tablespoon of vegan butter or oil or ¼ cup of vegetable broth
  • 2 cups of mushrooms, any type or combination, without stems, finely chopped
  • 3 tablespoons of flour or cornstarch 
  • 2 teaspoons of tamari or soy sauce 
  • Fresh ground pepper to taste
  • 2 cups of vegetable stock 
  • Salt, depending on taste   

Sauté mushrooms in butter, oil or vegetable broth. Add flour and cook for 3 minutes. Then add tamari and pepper and stir. Add vegetable broth a little at a time, stirring constantly until gravy is thick. Taste for salt. Serve hot. This will keep a couple of days in the refrigerator and heats up nicely in the microwave.
