Vegan Orzo & White Rice with Fresh Salsa

The addition of a colorful, fresh salsa brightens up this dish. You can use your favorite store-bought variety as an alternative, but you might end up with pink rice.  

  • 1 tablespoon canola oil  
  •  ½ cup orzo
  • 1 cup white rice
  • 2 cups water
  •  ½ teaspoon salt

 Fresh Salsa

  • 1 jalapeño, seeded, diced
  • 1 tomato, diced 
  •  ½ cup red onion, diced  
  •   Juice from ½-1 lime 
  •   Salt to taste    

In saucepan, over medium heat add oil and orzo and rice and brown for 4 minutes. Add water and bring to boil. Cover and simmer for 25 minutes or until rice mixture is dry. Set aside for 5 minutes. Fluff with fork.  To make salsa, chop jalapeño, tomato and onion. Mix with lime juice and add salt to taste. When rice mixture is cooked toss with fresh salsa. Serve.
