Vegan Sloppy Joes

 Children always seem to love Sloppy Joes. To experience the recipe with a vegan twist, try this combination adapted from the standard old recipe. The best and least processed way to add texture to this recipe is to use Crumbled Tofu.  

  •  1½ cup Crumbled Tofu (page 233) 
  •  1 cup ketchup
  •   3 teaspoons mustard, prepared, regular or spicy
  •   2 teaspoons rice vinegar 
  •   4 tablespoons BBQ sauce
  •   ½ cup onion, finely diced
  •   1-2 tablespoons vegan Worcestershire sauce 
  •   4 fresh hamburger buns, warmed in oven

Place all ingredients except the Crumbled Tofu in a nonstick skillet. Simmer on low heat for around 15 minutes or until the onions become tender. Add a little water if mixture becomes too thick.  Just before serving, add tofu to mixture. Scoop a mound on a hamburger bun and serve. If tofu is added to the sauce too soon it becomes soft and loses its texture.
