There are many ways to change the flavor of this grilled tofu. You can choose a variety of sauces as marinades: BBQ sauce, salsa, flavored mustards, soy sauce with chili sauce mixed in. Marinating can be skipped altogether and plain tofu can be seasoned with salt, pepper and red pepper flakes sprinkled on right before grilling.
Take drained tofu and cut into ½” slabs. Place in flat dish and cover tofu with the marinade or seasoning you are using. Let marinate anywhere from an hour to overnight, the longer the better. When ready to cook, scrape off most of the sauce from the tofu, but save the excess. Too much sauce on the tofu will burn on the grill. Plain tofu can now be seasoned with salt, pepper and red pepper flakes. Place the tofu slabs on a flat grill and slowly heat until grill marks are on both sides. Pan searing on a stovetop will also serve for this purpose. Heat tofu through, but do not dry the tofu out by overcooking. When building your sandwich, the extra marinade can be used as a sauce for more flavor. Serve with Mexican Rice Salad (page 53) or Cabbage Slaw (page 41) as a side.
