Vegan Steamed Carrots

  • 3-3½ cups carrots, peeled and sliced 
  • Salt and freshly ground pepper, to taste 
  • 1 tablespoon fresh parsley, minced 
  •   ½ teaspoon fresh thyme (optional)

Cut carrots into rounds or sticks, making sure all are about the same size. Steam until tender when a knife is inserted into the center, about 5-10 minutes. Put in a bowl and toss with salt, pepper and parsley or thyme.<
