Mashed cauliflower is great alone without anything else. Just cook like you would cook mashed potatoes. With caramelized onions, it creates a more unique dish that is different from routine. This is a great dish to make around the holiday season.
Cut out the center the cauliflower and then chop the rest into medium pieces. Steam or boil cauliflower pieces until tender and mash like you would potatoes in a mixer. Add a little almond milk and butter to add creaminess. Use part of the ½ cup of cooking water to thin if necessary. Salt and pepper to taste.
Place oil in a small skillet, over medium-low heat and then add onions. Stir occasionally, but do not over stir. Cook until golden brown, which takes about 30 minutes, allow the onions time to bring out the sugar and caramelize. The longer they cook, the better they are. Stir into mashed cauliflower by hand or drizzle on top.
