Vegan Cauliflower with Curry Butter & Rice

  • 1 steamed cauliflower
  • 2 tablespoons oil or vegan butter 
  • 1 teaspoon curry powder
  •   Juice of one lime
  •   2 tablespoons fresh chives, chopped 
  •   2 tablespoons fresh cilantro or parsley, chopped
  •   1 cup cashews, roasted, chopped  

In large skillet mix all ingredients together, except cauliflower and cashews, over medium heat. Add in steamed cauliflower and toss until well coated. Transfer to a serving bowl and top with cashews. Serve over brown rice.
