Vegan Simple Green Beans

  •  2 pounds (6 cups) fresh green beans, whole or broken in half with tips removed
  •   4 cups vegetable broth
  •   ½ cup onion, finely chopped
  •   Salt and pepper, to taste

Place beans in large pot with vegetable broth, water and onions. Bring to a hard boil for about 5 minutes and then lower heat. Add salt and pepper to taste. When beans are close to having the crispness you prefer, cover and turn off heat. Heat back up right before serving. Serves 4 to 6.

Hint:

  Everyone has a different preference on how they like their green beans so you have to decide if you want to cook them more or less than the recipe. Just don’t overcook because you will lose all of the flavor and crunch of a fresh bean.
