Vegan Steamed Kale

  •  1 large bunch of kale, with large spines removed
  •  Juice from one lemon
  •   1 teaspoon olive oil (optional)
  •   ½ teaspoon salt
  •   Freshly ground pepper, to taste

 Wash kale in a sink filled with fresh water to ensure all sand and dirt is removed. Drain. Steam kale for 5-10 minutes. Remove and toss with lemon juice or 1 teaspoon of olive oil, salt and pepper to taste.  Top the steamed kale with Walnut or Cashew Dressing (page 252).

  Hint:

  Kale is an excellent source of Vitamin A, and C and foliate, calcium and potassium.
