Vegan Quick Canned Tomato Sauce

  • 1 tablespoon olive oil or ¼ cup vegetable broth
  • ½ cup onion, finely diced
  • 1 clove garlic, minced
  • 1 (15 oz) can diced tomatoes 
  • Pinch dried oregano
  • 1 tablespoon tomato paste 
  • Salt and pepper, to taste    

Heat oil or broth in small skillet over medium- high heat and add onion with garlic. Cook until lightly brown or tender crisp. Add tomatoes, the oregano and tomato paste. Taste for salt and pepper.
