Jen’s Vegan Apple Spice Bread

Moist, flavorful and slightly sweet. This bread fills the house with wonderful aromas. It is so good!  

  • ¼ cup vegan butter
  • ½ cup sugar
  • 1 container plain yogurt, soy or coconut milk
  • 2 teaspoons ground flaxseed 
  • 1 teaspoon vanilla
  • 1 cup unsweetened applesauce 
  • 1 cup all-purpose flour
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • ½ teaspoon cinnamon
  • 1/8 teaspoon ground cloves 
  • A touch nutmeg
  • ½ cup raisins
  • ½ cup pecans, chopped

 Preheat oven to 350°F (175°C). Lightly oil an 8”×8” or 9”×9” pan.  Cream vegan butter and sugar together. Add yogurt, flaxseeds, and vanilla and beat well. Add applesauce.  Combine flour, baking soda, salt, cinnamon, cloves, nutmeg and stir into cream mixture. Stir in raisins and pecans. Pour mixture in prepared pan and bake for 25-30 minutes, until toothpick comes out clean from center. Let cool for 10 minutes before serving.
