A garlicky mayonnaise gives a powerful kick to mild flavored potatoes.
Preheat oven to 400°F (205°C). Slice potatoes into ½” slices but leave the skin on. Toss vegan mayonnaise and garlic together in a bowl and toss potato slices to coat. Place potato slices on sheet pan in single layer. Bake for 35-40 minutes until tender and lightly browned. Sprinkle sea salt on top after taking out of oven.
