Vegan Green Beans with Easy Caper Sauce

  • 1½ (4½ cups) pounds fresh green beans, whole or broken in half with tips removed
  •   4 cups vegetable broth or water
  •   ½ cup vegan mayonnaise 
  •   1 tablespoon capers
  •   2 tablespoons parsley, chopped
  •   1 garlic clove, finely minced
  •   ½ teaspoon salt
  •   1/8 teaspoon ground pepper

Cook green beans over medium-high heat in vegetable broth for 5-7 minutes. Drain. Mix vegan mayonnaise, capers, parsley, garlic, salt and pepper together. Taste for seasonings. Toss with green beans and serve.
