Vegan Grilled Corn

There are two ways to prepare the corn for cooking. It depends on your time. Both are great but the first one is slightly better.  

  • Corn on the cob
  • teaspoon vegan butter or olive oil 
  • Salt and pepper 

First way to prepare: Pull back the husks of the corn, leaving the husks attached, and remove the silks. Then soak in water for 20 minutes. Drain. Pull husks back over kernels, twisting them around to stay closed. Grill for 15-20 minutes, pulling back the husks the last few minutes so the corn can lightly brown. Serve with vegan butter or just lime juice plus salt and freshly ground pepper to taste. Second way to prepare: Remove husks and silks. Brush with melted vegan butter and add salt and pepper to taste. Wrap in foil. Grill 15 minutes, turning often. Remove from grill and remove the foil. Add grill seasoning or a sprinkle of chili powder or squeeze on juice of a lime or eat as is.

 Variations:

  •  A seasoning grill mix and slices of lime  
  • Mix pesto with vegan butter and spread on grilled corn on the cob.

 Hint:

    It is best to buy corn in the husks. Look for green husks with plump corn kernels. When you peel back the husks the silks should look green and a little sticky.
