- 2 tablespoons of lemon juice
- 1 teaspoon lemon zest
- 1 shallot, finely diced
- 1 clove of garlic, minced
- 1 teaspoon Dijon mustard
- ½ teaspoon salt or to taste
- Freshly ground pepper, to taste
- 4 tablespoons of canola or olive oil
Mix all ingredients except the oil in a blender or food processor. Slowly drizzle in oil through top of hole of blender and continue blending until the mixture slightly thickens. Refrigerate for storage.
