Vegan Roasted Cauliflower

  • Cauliflower, cut into 1½” florets or sliced into slabs
  •   1-2 teaspoons olive oil Salt
  •   Ground pepper
  •   Fresh lemon juice from ½ lemon
  •   Smoked or regular paprika, lightly sprinkled (optional)

Preheat oven to 450°F (230°C).  Toss cauliflower with oil and season with salt and pepper to taste. Spread into a single layer on a baking sheet and roast until browned (about 25 minutes), stirring occasionally. If desired, after removing from the oven, cover lightly with lemon juice and/or paprika.
