Vegan Spicy Noodles

This is a simple noodle dish that has a spicy, sweet, tangy light sauce. Eat alone, add baked tofu or toss in steamed vegetables.  

  • ½ pound spaghetti or soba noodles, cooked al dente
  • 2 teaspoons olive oil
  • 1 mild green or red chile pepper, cut into sticks
  • 1 bunch green onions, chopped
  •  2 cloves garlic, minced
  •  3 tablespoons soy sauce or Tamari 
  • 1 tablespoon chili paste
  • 1 teaspoon sugar
  • 1 tablespoon apple cider vinegar
  • 1 teaspoon toasted sesame seed oil

Prepare soba noodles as directed on package instructions. Set aside in medium bowl.  Heat a medium-sized skillet to medium-high heat. When hot, add oil and sauté pepper, onions and garlic for one minute. Add soy sauce, chili paste, sugar, vinegar, sesame oil and cook just until hot. Gently toss in noodles. Serve.
