Vegan Steamed Summer Squash

  • 4-5 medium yellow squash, washed
  •   Salt, to taste
  •   Freshly ground pepper
  •   2 tablespoons fresh chives, finely chopped

Slice squash into chunks or rounds. Steam until tender, 5-8 minutes, depending on size and amount. Toss with optional salt, pepper and fresh chives.

Hint:

Yellow squash is very delicate and tender and needs very little cooking.
