A garlic-lover’s treat. The roasting brings out the sweetness of the garlic and is wonderful squeezed on a thick slice of hot bread or a baked potato. Whole roasted garlic can also add a deeper flavor to vegetable or pasta dishes.
Preheat oven to 375°F (190°C)
Begin by removing all but the last layer of skins on the garlic. Set garlic upright in baking pan and add 4 tablespoons of water. Cover tightly with foil and bake 25-30 minutes. Then remove foil and bake 30 minutes more until garlic is soft inside. Test by squeezing one of the cloves for softness. Remove garlic from the oven. Serve one whole head per person with a slice of hot bread.
Buy heads of garlic that are firm and not soft or shriveled.
